冷凍水餃通常家裡必備的快速料理,臨時趕時間的時候,煮一鍋熱水就可以馬上變一餐,尤其是準備便當,水餃也是很好的選擇,即使沒有加熱直接吃也OK!對於水餃,Steve超級挑剔,之前住在美國中西部,所有的冷凍水餃都是機器的,幾乎沒有看過手工水餃,而機器的冷凍水餃真的沒有很好吃,但是想念台灣食物的我,還是吃得很開心,也因為如此Steve一直對水餃都沒有很好的印象,每次都要我自己包的水餃,他才會願意吃,他喜歡吃鮭魚水餃,我都要自己攪和餡料,配上他喜歡的菜,再包進去新鮮的水餃皮裡面。自己包的水餃除了好吃,還可以掌控口味和添加物,但是相對的,真的好花費時間!
看到鈺女王-女王的手作水餃,有點興奮,雖然沒有Steve愛的鮭魚口味的,但是Steve看了照片就願意嘗試看看,又是手工製作,還選用非基改和台灣在地新鮮食材,我看到一絲可以省下時間的曙光,輕輕鬆鬆就可以有手工水餃送上門,何樂不為!
Moving from USA to Taiwan, makes us miss a lot of foods! One of the foods are dumplings! We were lucky enough there are quite a few Asian/Oriental grocery stores in the Twin Cities area. Once in a while, I would pick up some frozen dumplings from the store. I have to be honest, those frozen dumplings are disgusting! LOL The wrappers are so thin and always break. You end up having wrappers with little sad itty bitty tiny meatball. Steve wasn't a big fan that at all! But at that time, I didn't care. It really fulfills my little homesick craving. 
When we moved to Taiwan, I finally have a chance to change Steve's mind on about dumplings. We started making our own dumplings, since salmon dumpling is Steve's favorite. It's really time consuming making your own dumplings, but it's worthwhile. We get to monitor and add, want we want to the filling. 
We were excited to try Queen Yu Homemade Dumplings, and maybe, just maybe... I don't have to spend hours making our own from now on! LOL

全程低溫宅配,我收到的時候雖然不是完全冷凍的狀態,比較偏向於半冷凍的感覺,收到要趕快放冷凍庫,也許是因為這樣,之後打開要烹煮的時候,有些被凍在一起,黏在一起比較麻煩一點,但是應該是天氣太熱、貨運公司的問題,其實敲一敲,或是在煮的過程中小心分開,都還好。
Even though the package was delivered by using cold shipping service, I was a little disappointed to find out part of the packages were not frozen. I put the packages in the fridge immediately after receiving, but some of the dumplings still stick together since it was thawed. 
簡單的包裝,但是很實在,可以感覺得出來袋子裡面滿滿的水餃,這次我收到的四種口味:高麗菜豬肉、韭菜、玉米、素食,都是一包就有大約50顆水餃(1000公克)。
The design of the package is really simple. It shows their business with some elegant design. Queen Yu Homemade Dumplings have a total of 6 different flavors, and we are here to try out 4 of those flavors, including cabbage, chives, corn, and vegetarian. 
每一種口味的成分及營養都有清楚標示,也詳細註明每一種口味的重量及顆數。
The back of the package are completely cover in list of ingredients, nutrition facts, and dumpling counts of each flavor. 
一開始,我研究了老半天都不知道這四包各是什麼口味,突然發現「鈺女王-女王的手作水餃」是利用勾選的方式註明,沒有很明顯,讓我找了一下。
It's kinda hard to tell the flavor from the bag until I noticed the check mark. Since Queen Yu Homemade Dumplings uses the same bag for all flavors, you have to look closely on the check mark to find out the flavors.
一打開袋子,一看水餃就知道是手工製作,雖然每一個都包的渾圓飽滿,但是每一個都長得不一樣,有別於一般機器水餃,可以看得到手工的皺摺!
You can tell the dumplings are homemade by looking at the seal. These ruffle sealing can only be found on homemade dumplings. 
一顆水餃普通大小,成人差不多10顆就會飽了!
Queen Yu Homemade Dumplings are in regular dumpling size, a meal for a regular adult will take about 10 dumplings. 
拿出我要準備煮的水餃,拿密封夾封起來,這樣可以避免水餃沾到冷凍庫的味道,除了使用密封夾,也可以把剩下的水餃用透明夾鏈帶裝起來,可以達到一樣的效果喔!
I like to find a way to seal the bag before putting back to the freezer. You can simply use the clips like this or even transferring to a resealable bag. 
媽媽教的煮水餃方法:
1. 水滾了之後,盡量從接近水面再放入冷凍水餃(不需解凍)。
2. 水餃一放進去,需要趕快攪拌一下,避免水餃黏在鍋底。
How to Boil Dumplings:
1.Slowly drop in the frozen dumplings one by one while the water is boiling. (Try to drop in as close to the surface of the water as you can in order to avoid hot water splashing.)
2. You want to quickly stir the dumplings once they are in the water, or it might start sticking to the bottom of the pot.
3. 第一次水滾後,倒入半杯的涼水,需要繼續偶爾攪拌。
4. 第二次水滾後,一樣倒入半杯的涼水。
5. 接下來看到水餃浮到水面上,外皮看起來一半透明,就可以撈起來咯!
3. Gentle stir every few minutes. When the water is boiling again, pour in half cup of the room temperature water.
4. Once the water is boiling the second time, pour in another half cup of the room temperature water.
5. Dumplings will float to the top of the water surface, and you can see the wrappers are a little see through. The dumplings are ready!
好可愛的皺摺,「鈺女王-女王的手工水餃」一看就知道是手工包的,外皮比一般的機器水餃厚,很多機器水餃都會被我煮到破掉,因為外皮太薄了,多煮一下,皮和餡就分開了。
These dumplings are so cute and look freshly made. Some of the frozen dumplings are not really seal properly, so it's easy to break during the cooking process. 
「鈺女王-女王的手工水餃」雖然水餃本身沒有很大顆,但是切下去有噴汁呢!
Queen Yu Homemade Dumplings are so juicy!
韭菜水餃雖然是很大眾的口味,但是一直是我的最愛,「鈺女王-女王的手工水餃」的韭菜水餃外皮好Q,很有嚼勁,配上滿滿的韭菜內餡,很好吃,調味也剛剛好,我個人覺得直接吃,不需要用到酌料!
Chives Dumplings are one of the most common dumpling flavors in the market, and it's definitely my favorite. Queen Yu Homemade Dumplings have really chewy wrapper. They wrappers are in the thicker side, but you won't find it doughy.
用水餃來帶便當最方便了,你也不用擔心吃飯時間有沒有可以加熱的地方,因為不管熱或不熱,都好吃。
I like to pack lunch with dumplings. You don't have to worry about reheating it, the dumplings are tasty no matter what. 
我自己研究出來的好吃煎餃方法:
1. 平底鍋中火加熱,放一點橄欖油或酪梨油。
2. 過熱了之後,一一把冷凍水餃排入鍋子裡。
How to make the perfect pan fried dumplings:
1. Heat up a nonstick pan with a drizzle of olive oil or avocado oil.
2. Once the pan and the oil are heated through, arrange the dumplings into the pan with the bottom side down. 
3. 等到下皮煎到恰恰(台語),也就是理想的金黃色,把火轉成中小火。
3. Don't move the dumpling until the dumplings are released from the pan. You would find the golden crust, and you can turn the heat to medium low. 
4. 混合均勻1:6比例的中筋麵粉和水。
4. Mix one tablespoon of all purpose flour with 6 tablespoons of water in a separate bowl. 
5. 平均倒入鍋中。
5. Evenly distribute the flour mixture into the pan. 
6. 差不多覆蓋餃子的1/4的高度。(不夠的話,可以再小心倒入一點水)
6. The mixture should come up to about quarter of the dumplings. (The bigger pan you use, the more water you need in order to cover the whole surface. You may add some more water to reach the desired level.)
7. 蓋上鍋蓋,慢慢等到餃子慢慢蒸熟。
7. Put on the lid and be patient.
8. 當底層的水完全蒸發,只剩下麵粉時,就可以打開鍋蓋。
9. 讓下皮平均受熱,直到所有的下皮都呈現理想的金黃色。(可能會需要移動鍋子以達到漂亮的顏色和脆脆的皮)
8. You can open the lid once most water has been evaporated. 
9. Once the bottom crust is evenly golden brown, you can turn off the heat.
10. 翻倒到盤子裡,讓下皮朝上,可以保持下皮脆度的時間。
10. Flip the dumpling to a big plate, crust face up. 
素食煎餃配上清炒香菇牛排剛剛好,蛋白質、澱粉、蔬菜都顧到了,哈哈!
I pair the pan fried vegetarian dumplings with some sauté mushrooms and steak. It's the perfect combo. 
可能是因為是素食的餃子,沒有肉產生的油汁,所以煮出來看起來比較沒有那麼飽滿。
The vegetarian is not as juicy as the meat dumplings, but the flavor is very well balanced. You can taste the sweetness from the cabbage.
但是讓我最沒有信心的素食水餃卻也讓我最意外,意外的好吃!「鈺女王-女王的手工水餃」味道有點像是素食菜包的內餡,但是比菜包的內餡還要細緻,使用地方的新鮮食材,取代我們不喜歡的加工添加物,真的好吃,讓人吃了也可以很滿足,改變了我們對一般素食水餃的刻板印象,原來選擇素食水餃不用犧牲口味及口感。
We were really pleased with Queen Yu Homemade Vegetarian Dumplings. It's reminds me of vegetarian bun's filling but way more delicate. I like that there is no additive or processed ingredients added into Queen Yu Homemade Dumplings. You can really taste the wholesome ingredients from local fresh produce. 
簡單的午餐就解決了,通常好吃的東西,Steve會吃得特別快,果然一下子盤子就空了。
Having frozen dumplings on hand is so convenient. You can whip up gourmet meal in no time. 
秋天到了,秋天是南瓜的季節,我們家最喜歡把南瓜做成無添加鮮奶油的南瓜濃湯,利用我的廚房小寶貝-Thermomix 小美,輕輕鬆鬆就可以把好吃、營養、濃郁的南瓜湯端上桌!
Fall is here, and we are so in love with this pumpkin soup lately. One of my favorite kitchen helpers, Thermomix, helps me make the soup by using all natural ingredients. 
你看看這個南瓜湯的質地,有沒有很像外面買的?!我可是沒有勾芡,所以冰了之後再加熱,還是可以維持一樣的質感!
This is a no cream soup, and I didn't use any thickening at all. Check out the consistency. It's so good to have a nice bowl of warm soup in the fall days.
「鈺女王-女王的手工水餃」玉米水餃配上濃湯,玉米濃湯的變化版,只是玉米跑到水餃裡面了!哈哈~
最後撒上一點碎洋香菜,又是一道迷人的一餐。
P.S. 水餃我先用水煮熟備用。
In order to make a complete meal, I added Queen Yu Homemade Corn Dumplings into the pumpkin soup, finished with parsley. The sweet corn always goes well with chowder like soup. 
P.S. Make sure you precook the dumpling by boiling in the water.
濃湯因為散熱比較慢,所以也剛好保持了水餃的溫度,從頭吃到尾,每一口都可以熱呼呼。
The soup is so creamy, it keeps the dumplings warm. 
我們其實從來沒有吃過玉米水餃,咬下去的每一口都可以咬到玉米顆粒,甜甜的玉米帶走了肉的油膩,配上濃湯真的很合。「鈺女王-女王的手工水餃」採用非基因改造的玉米,讓我們吃了放心!
There's a lot of corn inside the soup. I like to add some type of vegetable in the dumplings to make it shine, like chives, celery, carrots, cabbage, or here we have corn! By the way, we always appreciate company like Queen Yu Homemade Dumplings who choose to use Non GMO corn.
我們家吃飯,不喜歡吃太多的澱粉,如果單吃水餃要吃個8-12顆才會飽,但是如果配上其他東西,像是今天的濃湯,Steve吃4顆玉米水餃配上半碗湯就滿足了!
We usually reduce our carb intake in our daily diet, or at least we choose to eat healthy wholesome carb and more vegetable. Even though most people eat dumplings by itself as a complete meal, I always find a way to sneak in more vegetable into the meal. 
臨時想到的料理,我們來利用「鈺女王-女王的手工水餃」來做變化版的千層麵料理。
1. 鍋內放入你喜歡的肉醬食材,今天我放了洋蔥、香菇、青椒、一整罐的番茄、一點點剩下的碎肉,加入鹽和胡椒拌炒至個人喜好的程度。(加入鹽可以軟化蔬菜!)
Deconstructed Dumpling Lasagna: 
1. First we are going to make our own marinara sauce by sautéing onion, mushroom, green pepper, black pepper and salt together. The salt will soften the vegetable while cooking. (You may put any vegetable that you like.) Then add in a can of diced tomato.
2. 加入傳統的肉醬香料,包括:皮薩草、羅勒、洋香菜等,或是可以直接選擇放入市售的義大利香料。
2. Once the vegetable has been cooked down in the tomato sauce, you can add some spices, like parsley, basil, oregano. The Italian seasoning mix works just fine.
3. 刨入新鮮的起士。
4. 嚐一下調味(加入起士後才嚐味道,因為起士會增添鹹味),也可以加一點糖,顯出番茄的味道。
3. Grated in some Asiago Cheese.
4. Taste the flavor. You could add a teaspoon of sugar to bring out the tomato flavor. (The cheese adds some saltiness, so try a taste test after adding the cheese.)
有沒有一看就餓了!

5. 倒入之前預先煮好的水餃,拌炒後就可以上桌了!
5. Mix in the precooked dumpling for a few seconds, then you are ready to serve.
雖然說是想要做千層麵,但是到最後好像變成肉醬麵了!哈哈~
Here is my deconstructed lasagna! The spices here play a big role to transform into a Italian dish.
番茄蔬菜肉醬配上高麗菜豬肉水餃真的好好吃,蔬菜不知不覺就被吃下肚了,是一個騙小孩吃蔬菜的好方法!和其他口味比較起來,可能是因為其他的口味比較有特色,高麗菜水餃就比較普通。
The marinara sauce goes great with Queen Yu Cabbage Dumpling. A small effort to incorporate many vegetable in one meal. The cabbage flavor is good but not special to us compared with other flavors. 
「鈺女王-女王的手工水餃」的面皮比較厚,所以真的很耐煮,像這種需要兩次烹煮的過程(雖然第二次只是快速拌炒一下),水餃面皮一樣保持Q度,從頭到尾保持圓滾飽滿的元寶狀,Steve果然很捧場,對冷凍水餃完全改觀,現在問他要不要吃水餃,他都說OK!
This dish requires to cook the dumplings twice. The first time to cook it in the boiling water, and second time to stir in our homemade marinara sauce. I was so surprised the dumplings are still in the great shape after cooking it twice. Since Queen Yu Homemade Dumplings' wrapper are thicker, it can totally handle double cooking or even reheat process. The wrappers stay chewy and don't turn out soggy or doughy.

「鈺女王-女王的手工水餃」口味都很大眾化,口味是很樸實的,可以吃得到內餡的新鮮食材,利用台灣在地和非基改食材,新鮮製做並急速冷凍,若不是在貨運上有一點解凍,不然每一顆水餃都一顆一顆的很漂亮,面皮上的皺摺可以看得「鈺女王-女王的手工水餃」的用心,最讓我們驚奇的是水餃的面皮,厚實但是又不會感覺在吃生麵團,反而給予水餃Q度和嚼勁,讓每一口都有不一樣的味覺層次,韭菜和素食的口味最得我們家青睞,實實在在的食材都寫在包裝袋子上,讓我們吃得很安心。現在很多洋芋片、海苔、冷凍蔬果的包裝都採用可以重複開合的夾鏈袋包裝,一袋50顆的水餃真的很難一次吃完,有時候放冷凍庫沒有封好,很容易就有冰箱的味道,如果外包裝可以結合可以重複開合的夾鏈袋,讓我們可以食用更方便。另外,我知道大家可能都會煮水餃,但是如果可以加入簡單的烹煮步驟,讓外國人或是第一次下廚的人不會手忙腳亂的!

I have to be honest, Queen Yu Homemade Dumplings are not particularly special. Don't get me wrong, their dumplings are tasty. You can taste the wholesome, fresh, Non GMO ingredients from the filling, but the wrappers are actually what makes these dumplings shined! They are thick but not doughy, chewy and also really filling. The wrappers handle the cooking so well that it keeps all the juice inside the dumplings. It really elevates the texture and the flavors of Queen Yu Homemade Dumplings. 
Most of the potato chips, seaweed, frozen fruits or vegetable are packaged in resealable bags nowadays, and I am pretty sure no one will be able to finish a bag of 50 dumplings at one time. Although their packaging is simple with all the information, I think it would be nice if Queen Yu Homemade Dumplings can incorporate Resealable bags in their packaging. By the way, I think it would be useful if the package can include a little cooking instruction for first timer!
